  1. Soak rice for 20 minutes.
  2. In a bowl, add corn starch, soy sauce, ginger, garlic, brown sugar and chili flakes and stir till corn starch dissolves completely.
  3. Marinate chicken with this mixture and refrigerate for 20 minutes.
  4. Heat a skillet over medium flame, and drizzle some oil.
  5. Sauté onions until translucent, and follow with chestnuts, broccoli, capsicum and carrots, and stir until vegetables soften a little. Care must be taken no to cook vegetables completely.
  6. Push vegetables to one side, add chicken, toss the chicken until it cooks partially. You may add some more oil, if needed.
  7. Add soaked rice to the chicken-and-vegetable mixture and stir well over high flame for a minute.
  8. Add remaining marinade and water, give the contents a quick stir, cover the skillet and let simmer.
  9. Cover the skillet and let cool completely.
