Veg kurma, a delicacy eaten by every Indian and most foreigners, at least once. This popular South Indian coconut-based curry is prepared with a variety of spices and combined with vegetables. The superb combination has numerous health benefits.

Preparing paste for Veg Kurma:

Soak 12 cashew nuts in hot water for 30 minutes.
Soak 2 cups of cauliflower florets in hot water to get rid of insects.
Rinse the rest of the vegetables then chop them in bite-size.
Mix the ingredients then grind them to form a fine paste
How to Make Veg Kurma:

Heat 2 tsp. oil in a pan. Add onions, fry until they turn golden brown.
Add tomatoes, turmeric powder, and some red chili. Stir for about 2 minutes.
Add the veg paste then mix it well on a low flame.
Add 3 tbsp. of yogurt and continue to stir.
Add chopped mix of veggies then stir for another 2 minutes
Add 2 cups water then stir again.
Add salt as per taste.
Cook for additional 10 minutes.
TIP: The gravy should be consistent neither thick nor thin.

Add a few leaves of coriander leaves then stir for one last time. Now, your Veg Kurma is ready to be served with rice or chapattis.
