Ghee Recipes

The word ‘Ghee’ derives from the ancient Sanskrit word ‘Ghrita’. Ghee is basically a type of clarified butter and finds common use in a number of different cuisines including Indian, Middle Eastern, and Southeast Asian. 

Ghee is an important part of many medicinal preparations too. It is commonly prepared by allowing butter to simmer. The butter is churned out from cream wherein impurities are skimmed and the clear liquid fat retained. Spices might be added for flavor. There are several factors that influence the color, taste, and texture of ghee. This includes the source of milk, the quality of butter, and the time for which boiling takes place. 

It is recommended to store ghee in an airtight container in the dark. This way, ghee can last about 2-3 months. Use Vaya Preserve jars to store your ghee, Preserve is insulated, air-tight and opaque, perfect for storing cooking condiments.

Culinary Use

  • Ghee is used in a number of different cuisines from the Indian subcontinent. It is used in rice delicacies including biryani as well. 
  • In the state of Rajasthan, ghee is used as a common accompaniment to baati. Ghee is also applied to the top of the Indian breads. 
  • Khichdi, a traditional delectable preparation that is cooked using rice and lentils also uses ghee. 
  • Ghee is also added to sweets such as halvas and laddus. 
  • Ghee is extensively used in the preparation of South Indian curries. Ghee is also added to rice before consumption. 
  • Ghee is an important component of the Punjabi cuisine too where it used in making paranthas, curries, and daals. 
  • Ghee is great for deep frying as its smoke point is 250°C. This is the temperature at which the fat molecules begin to break down. 

Health Benefits

  • Ghee is known to help protect against heart disease contrary to what some believe.
  • Ghee also contains conjugated linoleic acid, a fatty acid which is known to protect against the action of carcinogens.
  • Ghee is also a rich source of butyric acid which is a short chain fatty acid. The good bacteria in your body convert fiber into butyric acid. This energy is then used. Thus, the body already produces a healthy ghee form for itself! 
  • Ghee consumption helps in the maintenance of a healthy digestive tract. 
  • Ghee is also known for its anti-inflammatory effects in Ayurveda.
