Ingredients

2 lemons

1 cup caster sugar
3 Star Anise
3-4 slabs Butter
1 pinch cinnamon
2 tbsp apple liquor

1 cup dry flour
1 puff pastry

How to Make Tarte Tatin

For the Apples

  1. Peel off the apples.
  2. Slice the apples into quadrants.
  3. Remove their cores and place them in a bowl.
  4. Slice the lemons in half.
  5. Squeeze fresh lemon juice on top of the apples.
  6. Make sure you remove all the lemon pits from the bowl.

For the Caramel

  1. Place a non-stick frying pan on the stove on low heat.
  2. Add caster sugar into the pan.
  3. Let the sugar sit into the pan at low heat so that it can melt into the caramel gradually.
  4. As it completely melts down, add the star anise into the pan.
  5. Let it cook until it releases a slight smell.
  6. Add butter into the pan and let it melt as well on low heat.
  7. Add cinnamon into the pan as the butter melts too.
  8. Mix it up with the caramel.
  9. After mixing, add apple liquor into the pan.
  10. After a minute, add the apple slices set aside into the pan.
  11. Arrange the slices in a circle around the corners of the pan. Place a few in the center.
  12. Coat the slices well with the caramel.
  13. Let the apples cook on low heat for at least 10 minutes until the apples are tender.
  14. While the apples simmer, prepare the dough for the Tarte Tatin.

For the Dough

  1. Spread some dry flower on a flat platform on the kitchen countertop.
  2. Roll the puff pastry flat using a rolling pin and more dry flour if needed.
  3. Shape it round in the shape of the pan.

For the Tarte Tatin

  1. Take the pan off the heat.
  2. Cover the top of the pan with the dough.
  3. Using your hands, tuck in the sides of the dough around the corners of the pan.
  4. Use a fork to make a few holes in the dough to make sure it does not puff up too much.
  5. Put the pan into the oven and bake at 375 degrees Fahrenheit for at least 30 minutes.
  6. Once, baked remove the pan from the oven.
  7. Let it cool down for a minute.
  8. Then place a tray on top of it and using oven mitts, turn the pan over so that the Tarte Tatin falls into the tray. Do it in a quick swift moment.
  9. Serve hot or let it cool down before taking a bite!
  10. Enjoy!

Trivia

This dessert has been named Tarte Tatin after the hotel it was first prepared in. The hotel is in France.
