How to Make Pasta Rustica

For Boiling Pasta

  1. Take a deep pot.
  2. Pour 5 to 6 glasses of water into the pot.
  3. Add oil and salt into the water.
  4. Bring the water to boil.
  5. Add linguine into the pot.
  6. Cook until the pasta turns tender but not too soft. Make sure you can still feel it when you bite.
  7. Once the pasta is boiled, drain all the hot water and run the pasta through cold water.
  8. Set it aside until it is needed for assembling.

For Preparing Gravy

  1. Take a non-stick frying pan.
  2. Heat up some oil into the pan.
  3. Fry chopped garlic in the pan for a couple of minutes.
  4. Add chopped roasted red peppers, sliced mushrooms, roasted grape tomatoes, white wine, salt, baby arugula, basil leaves and grated parmesan cheese into the pan.
  5. Stir fry it for a couple of minutes.

For Assembling

  1. Add the boiled pasta into the pan while it is still on heat.
  2. Fry it all for a minute on high flame.
  3. Take it off the heat and serve hot!
