How to make Aloo Chokha

  1. Heat oil in a skillet and splutter red chilis and coriander seeds. Add onions and stir until translucent. Add green chilies and minced. Let cook until the raw garlic smell disappears.
  2. Add potatoes, stir to combine and let cook until the potatoes turn a light brown.
  3. Add salt, coriander-cumin powder, and 3/4 cup of water. Cover the skillet the contents simmer until the potatoes turn soft. Remove the lid and cook until the water evaporates.
  4. Note: aloo chokha does not have gravy, so ensure that all the water evaporates before you serve the dish.
  5. Add amchur powder stir to combine.
  6. Transfer the aloo choka to a bowl and garnish with cilantro leaves.
  7. Serve and enjoy!
