How to Make Real Italian Calzones

  1. You need to first start off with the dough.
  2. Add yeast to water in a small bowl.
  3. Then add sugar, oil and salt and mix it in one cup of flour.
  4. Gradually stir the flour until the dough is workable and smooth.
  5. Knead the dough on a floured surface for less than 10 minutes.
  6. Once elastic, lay the dough inside a bowl containing a spoon of olive oil.
  7. While the dough is rising, add ricotta cheese, Cheddar cheese, mushrooms, pepperoni and basil leaves in one bowl and mix well. Once mixed, put the bowl inside the refrigerator to chill.
  8. When the dough is ready, separate into 2 equal parts.
  9. Roll the parts into circles and fill each of the circles with the cheese/meat filling before folding over.
  10. Secure the edges by folding inside with a fork.
  11. Brush the top of all calzones with an egg mixture and put on a greased cookie sheet.
  12. Boil at 190 degrees C for half an hour and serve hot.

Trivia

While calzones literally mean ‘trousers’, in food terminology they mean a ‘pizza turnover’. The item is a specialty of Naples in Italy, and has been considered as an amazing appetizer since ages.
