Kuska biryani is a quick and easy-to-prepare dish. Kuskha is derived from the Urdu word “khushk”, meaning “dry”. Unlike traditional biryani dishes that call for a type of gravy or chutney, this version is made entirely dry with basmati rice and ghee. This is probably why this dish is most often eaten during lunch, when people often don’t have time to wait for a meal to be prepared along with a gravy.
