- 1 can chickpeas (drained & rinsed)
- 1/3 head of red cabbage (cut into thin strips)
- 5 oil packed sun-dried tomatoes (cut into thin strips)
- 1 head romaine lettuce (cut into thin strips)
- 1 small jar marinated artichoke hearts (drained)
- 4 ounces of Italian salami (cut into thin strips)
- 2 cups of colored rotini pasta
Dressing :
- salt to taste
- 1 tsp Dijon mustard
- 1 tsp dried Italian seasoning
- 3 tbsp apple cider vinegar
- pepper to taste
- 1/3 cup extra virgin olive oil
