Egg podimas is a South Indian scramble egg dish. It’s a spicy version of scrambled eggs that is sure to give your breakfast that extra pick me up. You can make this podimas recipe quickly and with little hassle so it won’t hinder your morning routine. Like all scrambled eggs everywhere, it pairs well with other breakfast foods like bacon and pork chops. It works equally well as a vegetarian staple due to the high protein content of eggs. Eat it with your favorite chutney and enjoy.

How to Make Egg Podimas

  1. Finely chop the onions &coriander leaves.
    1. Keep it ready along with other ingredients.
  2. Heat a pan with oil and add the items to temper.
    1. Once mustard cracks and urad dal turns slight brown, add curry leaves & fry for a minute
    2. Add onions now and sauté them until they turn transparent.
    3. Add the chopped coriander leaves along with green chilli and chopped ginger.
  3. Mix well and add turmeric powder.
  4. Add required salt.
  5. Break the eggs and add them to the pan one at a time.
    1. Keep the flame low and stir the eggs continuously otherwise it may stick to the bottom of the pan.
  6. Keep stirring until the raw egg smell disappears and the eggs are cooked.

Note: The podimas will be dry and fluffy once cooked.
