These easy marinated vegetables probably make for one of the easiest and simplest vegetarian dishes out there. It takes an extremely short amount of time to prepare the vegetables and doesn’t require many ingredients outside of the vegetables themselves and water. This dish is nothing but healthiness. It may not be enough to stand on its own however, and might work best as an appetizer or side dish. Be sure to have your favorite salad dressing on hand.

Health Benefits

There’s not much to say about an easy marinated vegetable dish like this, except that it is without a doubt healthy. Vegetables just have too much to offer when it comes to health benefits. They’re a virtual cornucopia of vitamins and minerals. This recipe calls for broccoli and cauliflower which contain dietary fiber and proteins. They also have vitamin A, vitamin C, vitamin E, vitamin K, and vitamin B1, as well as iron, zinc, calcium, magnesium, sodium, and potassium.
