Holiday feasting might be coming to a close, but this Buffalo Baked Mac and Cheese is a must, especially if it’s cold outside. This one feeds a crowd and is great for Game Day eating, too.
Ingredients
- kosher salt and freshly ground black pepper
- 1 pound of elbow macaroni
- 6 tablespoons of unsalted butter with more of left aside for the casserole dish
- 1 yellow onion (chopped)
- 2 tablespoons of all-purpose flour
- 4 cups of cheddar cheese
- 2 cups of bergenost cheese
- 1/2 cups of crumbled blue cheese
- 1 1/3 cups of hot sauce
- 1 cup of breadcrumbs
- 2 scallions, sliced on the bias
