Beetroot kootu is a classic dish that is perfect for the summer heat. The crisp, crunchy taste of the beet combined with its natural juiciness makes the kootu refreshing and healthy. Beets pair well with a number of ingredients; anything like blue cheese, nuts, fish, or chicken. This recipe in particular pairs the beet’s flavor with red and green chillis, making for a spicy kootu guaranteed to help you cool off. Try making it and packing it for lunch. If you have a Vaya Tyffyn lunchbox, you can take it anywhere.
