how to make Beetroot Hummus

  1. Cool and peelbeet.
    1. Quarter it and place it in your food processor.
    2. Blend until only small bits remain.
  1. Add remaining ingredients except for olive oil.
    1. Blend until smooth.
  1. Drizzle in olive oil as the hummus is mixing.
  2. Add seasonings and adjust to taste, adding more salt, lemon juice, or olive oil as needed.

Notes: If it’s too thick, add a bit of water.

  1. Serve and enjoy!
