Beans sambar is an interesting sambar variant. The usual sambar is a lentil-based stew or chowder cooked with tamarind broth. When green beans combine with lentils, the protein profile of sambar increases further. Beans sambar pairs well with rice, dosas, idlies, and many other rice-based dishes.

How to make Beans Sambar

  1. Chop all the beans to 1-inch pieces.
  2. Rinse toor dal, drain excess water, and pressure cook until completely done. Mash the dal slightly.
  3. Roast cumin seeds, urad dal, coriander seeds, and red chillies with a tablespoon of coconut oil and set aside to cool.
  4. Blend roasted masala, coconut, a few curry leaves, and tamarind to a smooth paste and set aside.
  5. Heat a cup of water with chopped beans, a teaspoon of turmeric and curry leaves and. Add jaggery and salt and bring the mixture to a low boil. Add mashed dal and prepared masala and simmer for 10 minutes.
  6. Serve and enjoy! 


Beans are the only cultivated plant that actually enriches the soil.
