How to Make Vegetable Medley

  1. Preheat the oven to 220 degrees Celsius (or 425 degrees Fahrenheit). Lard two baking sheets with 1 tablespoon olive oil.
  2. Put the carrots, parsnips and yams over the baking sheets and place them into the preheated oven for exactly 30 minutes.
  3. After the 30 minutes are over, add the asparagus and zucchini, and sprinkle the remainder of the olive oil to the baking trays. 
  1. Continue to bake for a further 30 minutes, or to the point where all the vegetables become tender.
  2. Once the vegetables are tender, remove the dish from oven and set to cool for at least 30 minutes on the baking sheet.
  1. Hurl the roasted peppers along with basil, garlic, pepper, and salt in a large bowl and stir until the ingredients are thoroughly blended.
  2. Next, include roasted vegetables and toss to blend.
  3. Let it cool down to match the room temperature or cool in the fridge before you serve, or devour it yourself.

Trivia:

Vegetable medley, also known as ‘Briam’ in Greek, is an excellent vegetable dish. Although exact origin remains to be unknown, vegetable medley is supposed to be an olden dish which has had numerous variants and evolved overtime only to be extra delicious and healthy.
