How to make Tropical Sweet Potato Fries

  • Cover the sweet potatoes with water inside a large pot.
  • Bring to a boil over high heat.
    • Reduce heat to a medium-low temperature.
    • Cover pot and let simmer until potatoes turn tender.
  • Drain and let steam dry for 1-2 minutes.
    • Let cool.
  • Slice each sweet potato into wedges.
    • Arrange wedges on a baking sheet.
  • Preheat oven to 400°
  • Brush the potato wedges with olive oil, then season lightly with salt and pepper.
  • Combine crushed red pepper flakes, paprika, sea salt, lime zest, and chili powder in a small bowl.
  • Bake until the potatoes turn golden brown.
  • Move the sweet potatoes to a plate and sprinkle immediately with the cilantro and seasoning mixture.
