How to make Tofu curry

  1. Place a large nonstick skillet over medium-high flame, coated with cooking spray, add tofu, sprinkle with salt, and sauteuntil lightly browned. Transfer to another container.
  2. In the same skillet, add some oil, and sauté onion and garlic for about 2 minutes or until tender.
  3. Addcilantro, curry powder, salt and pepper and give the mix a quick stir.
  4. Stir in coconut milk, bring to boil, and simmer uncovered, for about 5 minutes till the sauce slightly thickens.Return sautéed tofu, stir, and letcook throughthrough.
  5. Enjoy with breads, rice, toasts, or just plain!

Trivia:

Tofu was a cherished delicacy of the Samurai rulers during the Kamakura period(1812-1333AD). The bean curd harmonized their more simple lifestyle and dietary habits . It is said that tofu replaced many fish based recipes in a lot of Japanese cuisines during this time.

The earliest known writings about tofu by an American come from Ben Franklin, who wrote to John Bartram in Philadelphia from London in 1770.
