How to make Sooji Halwa
- In a heavy bottomed saucepan, heat the ghee. Add sooji and cook on low flame, stirring it frequently.
- At the same time, dissolve the sugar in water in another pan on low flame. Keep it simmeringuntil required.It is best to use a pan with long handle as you can conveniently pour the sugar solution into sooji mixture.
- When sooji turns light brown, it gets a glossy lookand does not stick together. Add the sugar solution and cardamom. Bring it to boil then simmer till the liquid gets absorbed. At this stage, stir the mixture occasionally.
- Serve the halwa hot, garnished with almonds.
Halwa originated in Arabia and was first prepared in the 7th century. There are many variations that are made with different ingredients such as carrot, wheat flour, sooji, etc.
