How to make Purple Potato Chips

  1. Preheat oven to 450° F.
  2. Wash and peel potatoes.
    1. Cut into 1/16 in thick slices using a mandoline slicer or sharp knife.
  3. Place cut potato slices in a large bowl.
    1. Coat potatoes with olive oil and salt by tossing.
  4. Arrange slices on a single large rimmed baking sheet.

Note: If you have a wire rack, you can use it to improve air circulation and ensure even cooking.

  1. Bake at 450° F until chips begin to brown on the edges, about 15-18 minutes.
  2. Remove from the oven and let cool on a wire rack before serving, about 20 minutes.

Note: If chips are not crispy enough, bake at 450°F for an additional 5 minutes.

Trivia

The purple potato tends to be smaller than other species of potato.
