Ingredients
Biryani Masala
- 2 cup seeraga samba rice – soaked in water for 20 mins
- 2 medium sized onions – chopped
- 1 chopped tomato
- 1/2 tbsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 tsp coriander powder
- 2 tbsp curd or yogurt
- 2 tbsp olive oil
- salt to taste
Roast & Grind :
- 4 cloves
- 1 cinnamon stick
- 1/2 tsp black cumin seeds
- 1/2 tsp black peppercorns
- 3 mace
- 1 tbsp nutmeg powder
- 1 tsp fennel seeds
- 1/2 tsp cumin seeds
- 1 bay leaf
- 2 cardamom
Grind :
- 1-2 cup mint leaves
- 1/2 cup chopped coriander
- 2 green chilies
- 1 chopped onion

Note: At this stage, rice will be 75% cooked and water completely absorbed.
