1 potato – peeled and sliced thickly
1/2 cup besan – heaped
3 tbsp rice flour
1 tsp corn flour
1 ½ tsp red chilli powder
1/4 tsp turmeric
1/8 tsp asafoetida
1 tsp cumin seeds
1 pinch cooking soda
1 tsp ghee
1/8 tsp black pepper
oil to deep fry
salt as needed
1 tbsp idli dosa batter

Ingredients

How to make Potato Bajji

  1. Immerse the potato in water until use.
  2. Heat oil in a kadai.
    • Pour in the besan, cumin seeds, turmeric, rice flour, corn flour, red chilli powder, asafoetida, cooking soda, pepper and salt in a mixing bowl.
    • Whisk the ingredients together thoroughly.
    • Add the idli dosa batter.
      • Note: Use enough water to make the batter thick.
    • Spoon in ghee to it and mix again.
  3. Add 4-5 potato slices drained from water.
    • Pat out the excessive water.
  4. Coat each potato slice with the batter.
    • Slide the slices into hot oil gently.
  5. Using the ladle, gently pour hot oil over the top of bajjis to puff them up.
  6. Flip and continue to cook until both sides are golden and crisp.
  7. Drain over paper towel and repeat to finish.
