How to make Pineapple Mint Coconut Water Frappe

    • Make mint syrup by mixing sugar and water in a saucepan. Heat on a medium flame, stirring continuously. Cool until the sugar is dissolved. Add the mint leaves. Press the leaves so that they are dipped into the syrup.
    • Remove from heat, cover the pan, and allow it to stand for 15 minutes. Strain the mixture and your mint syrup is ready.
    • Mix pineapple, coconut water, and ¼ cup mint syrup in a blender and process till it becomes frothy and smooth.
    • Turn the mixture into a pitcher. Pour ice with a hint of lime and one sprig of mint and allow it to stay for a minute. The pineapple froth will rise.
    • Cover the pitcher and chill in the refrigerator. Stir well before serving.

The drink has the components of a smoothie and the texture of a juice. It must be poured over ice. This is a vegan drink and an all-time classic. You can add some gin, rum or vodka if you prefer an alcoholic twist.
