Orzo is a type of short cut pasta cut to resemble large grains of rice. Orzo dishes are typically fun to eat because the orzo adopts the coloring of its seasoning. Orzo prepared with saffron will be colored like saffron, and orzo prepared with black beans will be black. Orzo is vegetarian and white, yellow, and green.

Health Benefits

Orzo is one of those dishes that really changes depending on what you cook it with. Even its color changes depending on what you cook it with. This recipe happens to call for a large amount of parsley. Parsley helps to control cancer, manage rheumatoid arthritis, manage diabetes, and even prevent osteoporosis. It also has a wealth of vitamins and minerals: calcium, iron, magnesium, phosphorous, potassium, sodium, zinc, vitamin A, B12, E, and D.
