3/4 cup orzo pasta
1 1/2 tbsp extra-virgin olive oil
8 oz fresh mushrooms – sliced
1/4 tsp onion powder
salt and pepper to taste
1 1/2 tbsp melted butter
1/2 cup corn kernels
1/2 cup green peas
2 tbsp fresh flat leaf parsley – chopped

Ingredients

How to make Orzo

  • Boil a large pot of lightly salted water at high temperatures.
  • Add the orzo pasta and cook al dente then drain.
    • Note: This should take approximately 6 -7 minutes.
  • Heat the olive oil in a large skillet at a medium temperature.
    • Add the mushrooms, and season with onion powder, salt, and pepper.
    • Cook until the mushrooms have softened and secreted their liquid.
    • Note: This should be about 5 minutes.
  • Stir in the butter, corn, peas, parsley, and cooked orzo pasta.
  • Season to taste with salt and pepper.
  • Serve and enjoy!
