  1. Sauté the cumin until oil is crackling.
  2. Sauté ginger paste until it is aromatic.
  3. Fry onions until they are golden and cooked through.
  4. Add tomatoes, salt, and turmeric, and cook thoroughly.
  5. Add garam masala or curry and red chilli powder.
  6. Cook and continue to mix until the combination of onion and tomato is well blended and the masala is fragrant.
  7. Add the mixed vegetables.
  8. Sauté for 2-3 minutes, then add just enough water to partially cover them.
  9. Cover and place over a medium-low heat until the veggies are fully cooked.
  10. Add more water as desired to make the gravy thicker or thinner.
  11. Season to taste.
  12. Sprinkle it with coriander leaves, stir well, and serve.
