1 Bay leaf
1/2 tsp salt
For marinade
1 cup yogurt
1 tsp garlic – minced
1 tsp ginger – grated
1/2 tsp red chili powder
1 tsp coriander powder
1 tsp garam masala
1 tsp salt
For hariyali paste
1 tbsp green chili
1 cup fresh cilantro
1/2 cup fresh mint leaves
2 cups spinach chopped
1/2 cup onions – chopped
1 tbsp cashew nuts - chopped

Hariyali chicken is a tasty green chicken curry cooked in spinach and herbs sauce, richly flavored with aromatic spices. This is a uniquely flavored curry which is creamy, nutritious, and delicious. Hariyali chicken is an authentic Punjabi dish wherein chicken is cooked in a luxurious sauce made from spinach, mint, cilantro, green chilies, and cashew nuts.  It has layers of flavors and a tinge of freshness like no other. This vibrant green curry cooked in desi ghee pairs best with naan or roti.

How to make Hariyali Chicken

  • Mix yogurt, salt, red chili powder, ginger, garlic, coriander powder, and garam masala in a bowl. Marinate the chicken pieces for 45 minutes.
  • Boil spinach leaves in 1 cup water for 5 minutes on a medium flame.
  • Grind mint, cilantro, boiled spinach, onion, cashew nuts, and green chili in a blender to a smooth, green paste.
  • Heat ghee in a pan. Add bay leaf and cumin seeds. Transfer the green paste to the pan.
  • Fry for 5 minutes on a medium flame. Add the marinated chicken to the pan.
  • Stir-fry on a medium flame for 5 minutes. Lower the flame, cover the pan and cook till the chicken is tender. Serve hot with naan or roti.

Spinach is a superfood since it is rich in minerals. In the famous Popeye cartoon, whenever Popeye needed strength, he ate a can of spinach. This depiction led to an increase in the consumption of spinach in the U.S. by 33%. Crystal City, Texas, a town which grows spinach, erected a statue in honor of Popeye in 1937!

Spinach originated in Persia. From there, it traveled to China. Spinach is still commonly known in China as ‘The Persian Green’.
