Ingredients

1 lb. chicken – cut into pieces
1 tbsp ghee or olive oil
1 tsp lemon juice
1/2 tsp cumin seeds
1 Bay leaf
1/2 tsp salt
For marinade
1 cup yogurt
1 tsp garlic – minced
1 tsp ginger – grated
1/2 tsp red chili powder
1 tsp coriander powder
1 tsp garam masala
1 tsp salt
For hariyali paste
1 tbsp green chili
1 cup fresh cilantro
1/2 cup fresh mint leaves
2 cups spinach chopped
1/2 cup onions – chopped
1 tbsp cashew nuts - chopped

How to make Hariyali Chicken

  • Mix yoghurt, salt, red chili powder, ginger, garlic, coriander powder, and garam masala in a bowl.
  • Marinate the chicken pieces in the yoghurt marinade for 45 minutes.

HOW TO MAKE HARIYALI CHICKEN

  • Boil spinach leaves in 1 cup water for 5 minutes on a medium flame.
  • Grind mint, cilantro, boiled spinach, onion, cashew nuts, and green chili in a blender to a smooth, green paste.
  • Heat ghee in a pan.
  • Add bay leaf and cumin seeds.
  • Add the mint cilantro chutney to the pan.
  • Fry for 5 minutes on a medium flame.
  • Add the marinated chicken to the pan.
  • Stir-fry on a medium flame for 5 minutes.
  • Lower the flame, cover the pan and cook till the chicken is tender.
  • Serve hot with naan or roti.
