- ½ cup soy sauce – low sodium
- 1 tbsp Brown sugar
- 3 tbsp Fresh ginger (chopped)
- Kosher salt
- Freshly ground black pepper
- 3 tbsp vegetable oil
- ¼ cup dry sherry
- 1 green bell pepper – diced into wee cubes
- 2 cloves garlic – shredded
- 2 tbsp corn starch
- 1/3 cup water chestnuts - chopped
For garnish
- Minced fresh cilantro
- 2 scallions – thinly sliced
