Bihari khichdi is made from rice and lentils. This khichdi is essentially a salty porridge; one of the first solid foods given to infants. Many different regions throughout India have their own regional version of khichdi. The Bihari khichdi is made with rice, dal, garam masala, and ghee, making it a true comfort food. How to make Bihari Khichdi

  1. Rinse rice and dals separately.
  2. Heat 2 tbsp ghee in a pressure cooker. Add the dry red chilli, bay leaves, cumin seeds, and ginger garlic paste. Cook for a few minutes. Add the masoor dal and moong dal. Stir until slightly browned. Add the rice and keep stirring for few minutes.
  3. Add the vegetables, 3 cups of water, and salt. Pressure cook up to 3 whistles.
  4. Roast the spices under and make a fine powder of them.    

    5.Open the cooker once the steam is released.

    6.Add a teaspoon of the spice mix 2 tbsp ghee. Stir to combine.

    7.Serve and enjoy!
