How to make Aloo Masala

  1. Boil potatoes until they are perfectly cooked. When cooled enough to handle, peel the skins.
  2. Cut peeled potatoes in quarters.
  3. In a large bowl, mix rice flour and potato pieces until evenly coated.
  4. Heat oil in a large kadai over medium flame. Add asafetida and cumin seeds.
  5. As the seeds splutter, lower the flame. Add coriander powder, cumin powder, red chili powder, turmeric powder, and salt.
  6. Stir well until spice powders are roasted well.
  7. Now add potato chunks and stir gently to coat evenly with the seasonings.
  8. Garnish with finely chopped coriander.
  9. Serve aloo masala with steamed rice, roti, sliced bread or any dal and enjoy!

Trivia

Potatoes were introduced in India through the Portugese in the 15th century.
