Ingredients
- 2 tbsp olive oil
- 1 cup bell peppers (chopped) (you can use either green, red or a combination of both)
- 1 cup yellow onion (chopped)
- 1 Jalapeño pepper (deveined, seeds removed and finely chopped) (optional)
- 2 cloves of garlic--chopped
- 3 tbsp tomato paste
- 1 cup white rice (uncooked short rice)
- 1 can roasted diced tomatoes (with the liquid drained)
- 2 cup chicken broth
- 1 tbsp chilli powder
- 2 tsp ground cumin
- salt and freshly ground black pepper to taste
- 1/2 cup cheese of your liking for seasoning (grated)
How to Make Spanish Rice
Trivia Although the dish is called Spanish rice, it is not known by this name in Spanish regions. The locals of the country and Spanish cuisine enthusiasts refer to the dish simply as Arroz or Arroz Rojo which means red rice. |
