750-ml bottle chilled Prosecco
1 pound very ripe strawberries, hulled, halved
2 tablespoons Sugar

How to make Rossini

  1. Put some lemon juice, strawberries, and sugar into a clean food processor. Blend till the resultant mixture is silky smooth. Strain the pulp away with a sieve. Pour the leftover liquid in a pitcher. Cover it and let it cool off.
  2. Pour the pureed strawberry into a pitcher along with the Prosecco. Blend this by stirring the mixture very gently. If you do this too fast, the resultant mix will be foamy.
  3. Pour it in a clean champagne and serve as preferred. 

Trivia

  1. Strawberries are not classified as true berries by botanists. The reason given for this is that true berries like cranberries and blueberries have a lot of seeds inside while strawberries have their seeds outside. The seeds are yellow and dry.
