Ingredients
For the Rice :
- 2 cups long grain Basmati rice
- 2 tsp salt
- 4 cups water
- 2 bay leaves
- 2-3 green cardamoms
- 2 piece cinnamon stick
- 3-4 cloves
For the Masala :
- 3 tbsp vegetable oil
- 3 tbsp Ghee
- 500 g raw jackfruit
- 1 tsp shahi zeera
- 1 1/2 cup onions –thinly sliced
- 2 tsp finely chopped ginger
- 3-4 green chillies
- 1 cup yogurt
- 1 tsp red chilli powder
- 1/2 tsp garam masala powder
- 2 tbsp chopped mint
- 2 tbsp chopped coriander
- salt to taste
For Garnishing :
- 1/2 cup onions—fried golden
- 2 tbsp mint leaves--chopped
- 10-12 roasted cashew nuts
- 15-20 roasted raisins
- 10-15 strands saffron soaked
- 1 tbsp milk
