Masala rice is quick & easy to make, especially when you have leftover rice. This dish makes for a filling brunch, lunch or even dinner and tastes best with curries, stews, raita, or just plain curds. This recipe of masala rice demonstrates the simplest way of making masala rice, if you have more time in hand, feel free to add more vegetables and seasoning.

If you plan to use freshly-cooked rice, let the rice cool completely before mixing it with masala.

How to make Masala Rice

  1. Splutter mustard seeds, curry leaves, and cumin, add onion and sauté until translucent.
  2. Follow up with chili and stir for about 30 seconds.
  3. Add chopped tomato and stir until mushy.
  4. Add all the spice powder and condiments and give the mixture a quick stir.
  5. Fold in cooked rice and ensure the masala coats the rice evenly.
  6. Stir for 2 -3 minutes
  7. Turn of the heat, garnish with coriander leaves, and enjoy!
