Kadai chicken is chicken prepared in a kadai or kaharhi. The kadai is a type of deep, thick, and circular cooking pot that is very similar to a wok. It originated in India and has spread through the subcontinent, Asia, and the Middle East. The kadai is great for preparing stews due to its depth. This chicken kadhai recipe wondrously highlights the strength of cooking in a kadhai; if you don’t have one, you can make due with a reasonable large pot.

How to Make Kadai Chicken

  1. Add chopped tomatoes to a blender and puree them.
    Note: Skip this step if you don’t enjoy puree.
  2. Soak cashews in warm water for 10 minutes and make a paste.
  3. Heat oil in a kadai or wok.
    1. Cook capsicum and cubed onion for 2 minutes or untilthey produce an aroma.
    2. Transfer to a plate and set aside.
    3. Add broken chili and cumin
    4. Cook till the cumin begins to splutter.
  4. Add onions and cook till they turn a golden color.
  5. Add ginger-garlic paste and cook till the raw smell dissipates.
    Note: Do not burn the paste.
  6. Add chicken and cook for 1-2 minutes.
    1. Cover and cook in its own moisture.
  7. Add kadai masala or garam masala with red chili powder.
    1. Mix and cook well for just two minutes.
    2. Add tomato puree and salt.
    3. Mix and cook till the raw smell of the tomatoes disappears and the masala thickens.
  8. Add sautéed onions and capsicums.
    1. Mix and continue to cook for 2 to 3 minutes.
    2. Add cashew paste and mix.
    3. Cook till the gravy thickens to your desired consistency.
    4. Add back to the kadai and stir well.
  9. Sprinkle garam masala and coriander leaves.
  10. Mix well and cook for just one to two minutes.
  11. Serve and enjoy!
