Ingredients

Adjust Servings:
2 cups of tender cluster beans - chopped
2 medium-sized onions - peeled and cut into quarter pieces
3 medium-sized tomatoes - finely chopped
1 tbsp grated dry coconut
2 tbsp roasted chana
1 tsp red chili powder
1 tsp powdered coriander seeds
1 inch ginger piece
2 cloves of garlic
salt as per taste
For Seasoning
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp chana dal and urad dal
1 sprig of curry leaves
1 tbsp refined oil

How to make Cluster Beans Curry

  • Wash the cluster beans thoroughly and cut both ends. Chop them into one-inch Mix all the dry ingredients – grated dry coconut, roasted chana, coriander seeds, garlic, ginger, red chili powder, and salt and grind them together.
  • Add the quartered onions and a little water to make a smooth paste.
  • Pour oil in a thick bottomed pan and heat. Introduce all the seasonings. As soon as mustard seeds begin to splutter, add the paste of onion mixture and add a little water. When the onion mixture paste turns golden brown add chopped cluster beans and mix well.
  • Pour one cup water and cook the cluster beans covered till tender on low flame. Add tomatoes and cook for five minutes on low flame. As per the required consistency, you can add water and let it simmer for five minutes.

Trivia

Cluster beans are used to source guar gum, which is used across multiple industries. As compared to corn starch, guar gum – extracted from cluster beans has five times more thickening power. Guar meal churi is used for the production of different kinds of animal feeds.
