How to make Beetroot Cookies

  1. Preheat oven to 350°F.
  2. Line a cookie sheet with baking parchment paper.
  3. Puree the cooked beetroot and set it aside.
  4. Beat the butter and sugar until smooth. Add eggs, vanilla extract and beetroot and beat it well.
  5. Mix the flour, baking powder and salt together in a bowl.
  6. Add this dry mixture to the wet one. Mix in oats and chocolate.
  7. Drop the batter onto the prepared panand flatten it slightly.
  8. Bake for 12 minutes till it turns light brown in color.
  9. Cool completely on a wire rack.
