How to make Aloo cabbage fry

  1. Quarter, core, and shred cabbage.
  2. Heat oil over medium heat.
    1. When hot, add cumin and mustard seeds; wait till they sputter.
    2. Add finely sliced onion.
  3. Allow onion to soften then toss in the shredded cabbage.
  4. Add coriander powder, turmeric, and salt.
  5. Close pot, reduce heat slightly, and allow to cook until cabbage wilts.
  6. Add small pieces of diced potatoeswhen the cabbage begins to reduce in volume.
    1. Continue cooking on medium heat till potatoes soften and cabbage becomes tender.
    2. Stir occasionally.
  7. Add in shredded coconutto taste with potatoes.
    1. Let cook like in the previous step.
  8. Garnish with coriander sprigs.
  9. Serve and enjoy!.
