3 tbsp mustard oil
½ tbsp whole cumin seeds
2 tsp of cumin powder
2 tbsp of ginger paste
1 tsp of turmeric powder
2 tsp of ghee
1 tsp garam masala
2 tsp of sugar
1 tsp chilli powder
1¼ cup of fresh coconut milk
salt according to taste

How to make Prawn Malai Curry

  • Wash the prawns in fresh water and then blanch them in turmeric water and keep aside.
  • Heat mustard oil in a pan. Add whole cumin and sugar to the oil and stir lightly. Add the ginger paste along with chilli powder and turmeric powder and sauté for a few minutes.
  • Slit a few green chillis (depending on how spicy you want your dish to be) and add them to the oil. Add the blanched prawns and continue to stir for a few minutes till the prawns are covered in the spices.
  • Add the coconut milk and salt as per taste and let it cook for some time till the prawns are fully cooked.
  • Transfer the malai curry to a bowl and garnish it by sprinkling some garam masala on top and drizzle it with ghee.

The coconut milk adds a unique sweet flavor to the prawn malai curry delicacy while the garam masala adds its own special touch.
