How to make Vegetable chow mein

  1. In a pot, add water and bring to a boil and then add 1 tbsp salt. Put in the noodles and boil for 3 minutes, drain and use cold water to rinse well. In a large bowl, place the boiled noodles and add oil 1 tbsp oil.
  2. In a different bowl, combine the ingredients for the sauce and add 3 tbsp water.
  3. On medium flame, heat a large pan until hot. Add 2 tbsp oil, red bell peppers, and onions. Sauté for 2 minutes until just tender.
  4. Add the mushrooms and stir-fry continuously for 5 minutes or until golden brown. Transfer the vegetables to a bowl.
  5. Heat the same pan again until very hot. Pour in the remaining 2 tbsp oil and sauté garlic and ginger for 30 seconds. Add the boiled noodles and stir fry for 5 minutes or until they are heated through.
  6. Transfer the vegetables back to the pan. Add the prepared sauce and tofu chunks; Toss the noodles using tongs until they are heated through and well combined.
  7. Warm a platter and transfer the contents of the pan into it. Your delicious vegetable chow mein is finally ready!

Chow mein translates as ‘stir-fried noodles’. Chow actually means ‘stir-fried’ while Mein means ‘noodles’. The pronunciation “chow mein” is an English phonetic corruption of the Taishanese pronunciation for “chāu-mèing”.
