Ingredients

Adjust Servings:
2 oz rice noodles (Pad Thai style)
1 clove of garlic — minced
1 1/2 tbsp of lemongrass — minced
1 tbsp of olive oil
1 tsp of ginger — ground
32 oz (1 carton) of chicken broth
2 tbsp soy sauce
1 tbsp white sugar
13.5 oz of low-fat coconut milk (1 can)
1/2 cup mushrooms — sliced
1 tbsp of fresh lime juice
2 green onions —thinly sliced
10 oz of baby spinach leaves (1 bag)
1/4 cup of cilantro — chopped

    Ingredients

    How to make Thai Curry Soup

    • Pour water in alarge potand add 1-2 pinches of salt to it, bring it to a boil.
    • Add the Pad Thai noodles.
    • Cook until al dente, which is around 3 minutes.
    • Drain well and rinse with cold water.
    • Set the Pad Thai noodles aside.
    • Heat olive oil in a saucepan keeping the flame at medium.
    • Add the lemongrass, ginger, and garlic.
    • Keep stirring until you can smell a sweet aroma from the oil. This should take nearly1 minute.
    • Add in the curry paste.
    • Cook for a further 30 seconds.
    • Add half a cup of the chicken broth.
    • Stir till the curry paste dissolves in the broth.
    • Pour the rest of the chicken broth to the noodle mixture, adding the sugar and soy sauce as well.
    • Bring it to boil. Turn the flame tomedium-low.
    • Partially cover the saucepan and let it simmer for 20 minutes.
    • Add the coconut milk, lime juice, cilantro, mushrooms, spinach, and shrimp while stirring the contents of the saucepan.
    • Turn the heat to medium high and let it simmer for almost 5 minutes.
    • Divide the Pad Thai noodles that you had set aside into equal amounts in 4 serving bowls.
    • Pour the soup with a ladle on top of the noodles.
    • Addsliced green onion to garnish.
    • Serve while piping hot.
