Nothing says fancy like a well-constructed Tejano style shrimp cocktail. A traditional shrimp cocktail requires serving shelled and cooked prawns in a cocktail glass complete with cocktail sauce. This dish used to be the height of fine society hors d’oeuvres in the 1960s but is now considered to be a bit out of style. The Tejano style is a Tex-Mex inspired revival that uses cilantro, serrano, and chiles; it’s really bringing the cocktail back in vogue.
