This Italian sausage tortellini soup is a delicious spin on classic dishes. Tortellini, often referred to as “belly button,” is pasta filled with meat or cheese. You can choose either though I prefer a three-cheese blend filling. The Italian sausage gives this soup, made from chick broth, a delicious spicy kick and fill your home with the smells of the Mediterranean. Pair with your favorite red wine and some candlelight for a romantic date.

How to Make Italian Sausage Tortellini Soup

  1. Remove casings from sausage and crumble for frying.
  2. In a large dutch oven, brown sausage, onion, and green pepper.
  3. Drain well.
  4. Stir in chicken broth, carrots, tomatoes, tomato sauce, Worcestershire sauce, garlic powder, cayenne powder, salt, and pepper.
  5. Bring to a boil.
  6. Reduce to a simmer and cook for 20 minutes.
  7. Add tortellini and let simmer for 5 minutes or until tender.
  8. Ladle soup into bowls.
  9. Top with a few sprinkles of mozzarella cheese.
  10. Serve with crusty bread.


While normally made of pork, Italian sausage can also be a mixture of other meats, even goat.
