How to make Chicken Salad with Thai-Flavored Dressing

  • Heat water in a large pot. On boiling, add the chicken breasts and cover with a lid. Cook on a medium flame for 20 minutes.
  • Remove the chicken from the heat, drain water, and shred with forks on cooling.
  • Transfer the shredded chicken and all shredded and chopped vegetables (cabbage, papaya, onions, bell peppers, and cilantro) in a large mixing bowl and toss. Chill for some time.
  • Blend garlic, peanut butter, soy sauce, lime juice, rice vinegar, sesame oil, fish sauce, red chili, sugar, and olive oil in a blender jar for 45 seconds. If the dressing is thick, add 1 tsp of warm water.
  • Pour the Thai-flavored dressing over the shredded chicken and vegetables. Toss and garnish with chopped peanuts and cilantro.

Trivia

Thai cuisine is a perfect blend of four flavors in every dish – salty, sweet, sour, and spicy. Thai cuisine lays emphasis on fresh fruits and vegetables, that’s why all curries, salads, and desserts are loaded with fruits and vegetables. Thai people believe that eating alone brings bad luck, so food is always eaten together.
