Ingredients
- 5 tbsp desiccated coconut
- 13 cashews
- 1/2 tbsp roasted chana dal
- 3 tbsp Poppy seeds
- 2 garlic cloves
- 1/4 tbsp Coriander seeds
- 1 tsp fennel seeds
- 1/2 tsp cumin seeds
- 2 cloves
- 2 green cardamoms
- 5 peppercorns
- 1 kapok bud
- 1 green chili
- 3/4 tsp chopped ginger
- 1/2 cup water
- 1 medium-sized cauliflower
- 1 cup diced potato
- 1/2 cup green peas
- 1/4 chopped carrots French beans
- 1/3 cup finely-chopped
- 3/4 cup sliced tomatoes
- 5 curry leaves
- 1/4 tsp chili powder
- 3 tbsp yoghurt
- coriander leaves for garnishing
Preparing paste for Veg Kurma: Soak 12 cashew nuts in hot water for 30 minutes. Heat 2 tsp. oil in a pan. Add onions, fry until they turn golden brown. Add a few leaves of coriander leaves then stir for one last time. Now, your Veg Kurma is ready to be served with rice or chapattis.
