Singaporean Prawn Fried Rice

This recipe is a twist on the Singaporean noodles, it’s a classic recipe that you will always find in Singaporean restaurants or anywhere that serves quality Pan Asian cuisine.

It’s a spicy, wholesome and filling dish that can be eaten with other Asian gravy based dishes, crispy chicken or fish or just as is. It is made with the freshest of ingredient that give it the special Asian kick. A lot of people have this misconception that Chinese fried rice and Singaporean rice are almost the same. It is not quite so as the ingredients and spices are different as you will see.

Ingredients

tbsp sunflower oil: 3

g prawns (small): 200

spring onions (roughly chopped): 2-3

clove garlic (sliced): 1

large red chili (chopped): 1

cup boiled rice (long grain): 1 1/2

cup garden peas: 1/2

tsp chili powder: 1/2

tsp turmeric: 1/4

tsp garam masala: 1/4

ground clove: 1

star anise (ground): 1/2

tbsp soy sauce: 1

tbsp sesame oil: 1

How To Make Singaporean Prawn Fried Rice

  1. In a medium sized frying pan, heat 1 tbsp of sunflower oil for a minute.
  2. Add in the prawns along with the garlic, chili and spring onions.
  3. Stir fry for a minute and set aside.
  4. In a small bowl, whisk the egg and fry it in the pan and make an omelet, roll and slice the omelet into long and thin strips. Set the egg aside.
  5. Heat the frying pan and add in a little oil again. When you see a little bit of smoke emerging, add in the prawn mixture along with boiled rice and peas.
  6. Keep stir frying until all the ingredients are combined.
  7. Grind the clove and star anise in a food processor and add the chili powder, garam masala and turmeric to it.
  8. Add this seasoning to the rice and mix well.
  9. Add in the omelet strips and mix well.
  10. Season the rice with sesame oil and some soy sauce.
  11. Serve and enjoy.
