Mushroom Masala

Mushrooms are people’s favorite, not just because they make great substitutes for meat, but because they are delicious in their own right!  Whether it is a juicy burger, a creamy soup or a fluffy omelet, mushrooms definitely bring in a unique taste and an earthy flavor to the dish. This mushroom masala, loaded with spices is perfect to go on the menu for a special dinner night. You can pair this masala with roti, rice or even pulao or jeera rice! A handful of ingredients and about 10 minutes of your time is all you will need to make this killer recipe.

Ingredients

3/4 cup cubed onions

200 gms sliced mushrooms

1/2 cup chopped tomatoes

1/2 inch ginger

3-4 garlic cloves

3-4 cashews or almonds

1/2 tablespoon of oil

small piece of bay leaf

2 green cardamom

a small stick of cinnamon

3/4 teaspoon of red chili powder

3/4 teaspoon of light garam masala

3/4 teaspoon of coriander powder

salt to taste

few leaves of coriander chopped (optional)

  1. In a pan, heat oil and sauté onions for a minute and then add garlic to it. Keep cooking until onions turn translucent.

  1. Add tomatoes, green chili and cook until the tomatoes are done.

  1. Add cashews to this masala mix and grind into a fine paste.

  1. Heat a pan over medium flame, add oil.
  2. Add cumin seeds, bay leaf, cardamom and cloves.

  1. Stir in the onion-tomato paste and let it cook until it thickens.

  1. Add red chili powder, coriander powder, salt and garam masala and cook on a medium flame.

  1. When the masala is cooked well, add in the mushrooms and cook for 3 minutes.

  1. If needed, you can add a splash of water, and cover and cook the mushrooms until they become tender.

  1. Garnish with chopped green coriander leaves and serve warm!
