Pineapple fried rice is a delicious addition to the fried rice family. We all love fried rice because it is simple and easy to prepare as well as being extremely filling. What makes fried rice amazing though, is its ability to pair with so many other meals and ingredients. This recipe calls for pineapple which acts as a natural sweeter. Ingredients

oz crushed pineapple with juice: 8

cups water: 4

cups white rice: 2

tbsp peanut or walnut oil: 1

eggs – beaten: 2

tsp sesame oil: 1/2

oz tofu – diced: 12

cup mushrooms – chopped : 3/4

tbsp soy sauce: 3

green onions – thinly sliced: 3

cup carrots – diced : 1

How To Make Pineapple Fried Rice

  • Combine the juice from crushed pineapple with 3 cups of water in a medium saucepan,.
  • Bring the mixture to a boil.
  • Add the rice and boil again.
  • Cover and reduce the heat to simmer.
  • Cook 25-30 min or until rice turns tender.
  • Heat the walnut or peanut oil in a nonstick wok.
    • Add the eggs, do not stir and cook until set.
    • Slide the eggs out of the wok onto a plate.
    • Cut the eggs into short, narrow strips.
  • In the same wok, heat sesame oil and stir fry the tofu with the mushrooms, soy sauce, green onions, and carrots for approximately 4 mins.
  • Stir in cooked rice, pineapple, and egg strips and heat for a few minutes.
  • Serve and enjoy!
