Ingredients

olive oil: 1 cup

white vinegar: 1 cup

pimento-stuffed green olives, chopped: 1 jar

black pepper: 1/2 tsp

red pepper flakes: 1 tsp

Dried oregano: 1 tsp

cloves garlic--finely chopped: 2

water

salt: 1/2 cup

fresh cauliflower florets: 1/2 cup

small onion - chopped: 1

medium carrot, diced: 1

celery stalk, diced: 1

fresh jalapeno peppers, sliced: 8

red bell peppers, diced: 2

green bell peppers, diced: 2

How To Make Hottalian Giardiniera

  1. Gather green and red peppers, jalapeno, celery, carrots, onion, and cauliflower in a bowl.
  2. Add salt and stir well. Fill the bowl with cold water in a quantity that’s enough to cover the ingredients.
  3. Cover the bowl with a plastic wrap or aluminum foil and put in the refrigerator. Let it stay overnight.
  4. The next morning, drain salty water from the mixture, and thoroughly rinse vegetables.
  5. Take a bowl and blend in garlic, oregano, red pepper flakes, black pepper, and olives. Mix thoroughly.
  6.  Merge with the vegetable mixture prepared and then cover and refrigerate for 2 days before it is ready to use.
  7. Put on your beef sandwich, sausages, pasta, or pizza topping and drool over!

Trivia

As famous as it is here, giardiniera wasn't invented in Chicago. It was first prepared in Italy, where it was perceived as blended pickles. It is very useful as it has vegetables in the blend that are healthy for the human body.
